If I had a nickel for all the leftovers I thought I’d have after meals, I would be sitting on a beach right now as rich as can be. Every time I make a large meal, I think, “I’ll definitely have leftovers.” But it never happens! Maybe my husband and I eat like wolves. Maybe we’re subconsciously starving ourselves. In any case, we strongly believe in NO FOOD LEFT BEHIND.
Thanksgiving is the only meal that I can guarantee leftovers. With the turkey, the stuffing, the bread, and the pie, our refrigerator is stocked for a week. Personally, I believe that the leftovers are the best part of Thanksgiving. I get so much satisfaction from slaving away in the kitchen for a day knowing that I really won’t lift a finger for the next week.
Here are a few of my leftover staples that are guaranteed to feed the pack:
20 Minute Rolls
½ c. sugar
½ c. shortening or margarine
1 tsp. salt
2 c. heated milk
1 Tbsp. yeast
½ c. warm water
6 ½ c. flour
Combine first three ingredients in large mixture and slowly add heated milk to mix. In a separate bowl, dissolve yeast in ½ c. warm water. Add to milk mixture. Add flour and eggs to mixture alternately until all combined. Let rise for 20 minutes. Turn out onto floured surface and roll to 1/4 inch thick. Cut into triangles and roll like crescents. Bake at 425 degrees F until light brown.
The Turkey Sandwich
Cut one of the 20 minute rolls in half, spread with mayo/miracle whip (it’s a constant debate in my house), and add layers and layers of leftover turkey slices. Sprinkle with salt and pepper to your heart’s content and enjoy. There’s never been a better sandwich!
