meals for neighbors in need
One of my most vivid memories of growing up in a great neighborhood was the delicious food. It’s no secret that I live for a great dish. Whenever my mom was sick, women would just flock to our house with casseroles, pies, and trifles, OH MY! My family felt so lucky to have such great neighbors who were looking out for us. Whenever we had the chance, we tried to return the favor.
Some of the best ways to bond are over a good home-cooked meal, and it doesn’t matter if the meals are wrapped up all cute (though that’s more fun!). Whether someone is sick, a family is moving, or they just need a visit, your neighbors will be grateful you thought of them. Here are a few recipes to help those neighbors in need:
Three-Cheese Chicken Alfredo Bake
Adapted from Southern Living
1 (16-ounce) package penne pasta
2 (10-ounce) containers refrigerated Alfredo sauce
1 (8-ounce) container sour cream
1 (15-ounce) container ricotta cheese
2 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 1/2 cups mozzarella cheese
2-3 chicken breasts, boiled and shredded
Prepare penne according to package directions; drain and return to pot. Stir together Alfredo sauce and sour cream; toss with ziti until evenly coated. Spoon half of mixture into a lightly greased 13- x 9-inch baking dish. Stir together ricotta cheese and next 3 ingredients; spread evenly over pasta mixture in baking dish. Layer shredded chicken evenly. Spoon remaining pasta mixture evenly over chicken and ricotta cheese layer. Sprinkle evenly with mozzarella cheese. Bake at 350° for 30 minutes or until bubbly.
Mayo & Parmesan Rolls
Frozen Rhodes rolls (you decide the quantity, no judgment here)
1 stick (8 Tbsp) melted butter
1 cup Mayo
1 cup grated parmesan cheese
Dried parsley flakes
In separate bowls, make an assembly line with the butter, mayo, and cheese. Take a frozen roll and dip it in the melted butter, then GENEROUSLY dip it in the mayo, and roll the top half in the cheese. Place on greased cookie sheet and sprinkle with garlic salt and parsley flakes. Cover, and let rise for 4-5 hours. Bake at 350° for 12-14 minutes. After removing rolls from oven, brush with melted butter and a pinch of garlic salt. These can be enjoyed warm from the oven or at room temperature. You’re in trouble either way.
For dessert, take your neighbors some caramel apples. They’re a delicious treat that everyone can enjoy. Wrap them in cellophane, tie with some ribbon, and you’ve got yourself a meal to remember!
